1/3 cup of chia seeds
2 cups almond milk or filtered water (if you prefer a less rich taste)
1 tspn vanilla essence
2 tablespoons of blueberries or berries of your choice
1. Add chia seeds, almond milk, and vanilla essence into a glass-lidded pot.
2. Shake pot so all ingredients are mixed and seeds are well covered.
3. Leave for 45 minutes or overnight for the chia seeds to absorb the milk – they will swell up and look a little like tapioca (store in fridge).
TIP: You can make the night before and store in fridge so it’s ready for breakfast, it may be stored for 24 hours in the fridge. It is also a great dessert; add a teaspoon of raw cacao powder or unsweetened fruit puree such as mango to add flavour.
