This porridge can be started the night before if desired so it just needs heating in the morning. To do so, make the porridge as instructed but once it has simmered for a couple of minutes, turn off the heat and leave it on the stove overnight. Heat it well in the morning – it may need a little more liquid added in the morning before heating.
1 cup coconut milk (can be replaced with rice milk or other suitable milk)
1 cup water
¼ cup Linwood’s Milled Flaxseeds (or any other suitable milled seed mixture)
¼ cup Millet Flakes (I ﬁnd the millet ﬂakes in Norway have a better taste than the UK’s)
¼ cup Quinoa Flakes ¼ cup chopped almonds ( or other suitable chopped nuts)
1 tsp pure vanilla extract
¼ tsp ground cardamom (can be replaced with cinnamon and or ginger)
Can be topped with fruit, cinnamon, Linseed oil, Udoe’s choice Oil, and a sprinkle of stevia or other suitable ingredients!
This recipe is enough for one big portion or two smallish portions.
1. Mix all ingredients together in a pot.
2. Bring to a simmer and allow to simmer until thickened suitably.
